"Amarone", whose full name is "Amarone della Valpolicella", is a rare wine. Produced by Villa delle Rose on an estate east of Verona, by the side of a lake where Venetia meets Lombardy.
Amarone wine is obtained through a special production method, called "Appassimento", which consists of drying the grapes on straw for a certain period of time (up to 120 days), before pressing them gently. Followed by a very slow fermentation process, resulting in a full, rounded wqine with much more concentrated in aromas.
